A Very Long Argument About Pasta Water
Salt it like the sea, they say, and then nobody agrees on which sea. Here is what actually matters and what does not.

The advice is always the same three words and the three words are not enough. Salty like the sea is roughly three times more salt than most people actually use and about half what the pedants insist on, and neither camp will tell you what it is for.
So: what the water is doing, what actually matters, and what is folklore that has been repeated so many times it has calcified into rule.
How salty is salty
The water should taste seasoned when you try it — pleasant, not punishing. Seawater is about 3.5% salt, which is genuinely unpleasant to drink; you are aiming for something closer to 1%, which is roughly a tablespoon of kosher salt per litre.
This is the only chance the pasta itself gets to be seasoned. Sauce sits on the outside; the salt in the water goes into the dough as it hydrates. Under-salt here and the finished dish tastes vaguely blank no matter what you do to it afterwards, and you will spend the rest of the meal adding salt to the top of something that needed it in the middle.
Salt after the water boils, not before, for the entirely unglamorous reason that salted water is slightly slower to come up and salt can pit the bottom of a pan it sits in undissolved. This is not a flavour issue. Anybody who tells you it changes the taste is guessing.
The amount of water
Here is the one where the traditional advice is actively unhelpful. You do not need an enormous pot. You need enough water that the pasta can move and is fully covered, and that is considerably less than most people use.
Less water means the starch coming off the pasta is more concentrated, and concentrated starchy water is the entire mechanism behind a sauce that clings. A vast pot dilutes the most useful ingredient you are producing. It also takes longer to boil and uses more salt to hit the same concentration.
The mug you keep back
This is the part people skip and it is the part that changes the dish. Before you drain, take out a mug of the water. Not a splash — a mug. You will use more of it than you expect and you cannot get it back once it is down the sink.
The starch in that water is the difference between sauce clinging to pasta and sauce sitting in a puddle underneath it.
Starch molecules suspended in water act as an emulsifier — they let fat and water combine into something glossy and stable instead of separating. That is why a spoonful of pasta water turns oil and cheese into a sauce, and why cacio e pepe collapses into greasy clumps without it.
Finish in the pan, always
Drain the pasta a minute or two before the box says, when it still has a definite bite, and move it into the pan with the sauce along with a good splash of the water. Then keep it moving over heat for that last minute or two.
What happens in those two minutes is the whole technique. The pasta finishes cooking in the sauce and absorbs it, the starch on its surface thickens the liquid, and the whole thing pulls together into one dish instead of two things served on top of each other. Add more water whenever it looks tight. It should look slightly too loose in the pan, because it will keep tightening on the plate.
What does not matter
Oil in the water does nothing except waste oil. It floats. Its stated purpose is to stop the pasta sticking, and it cannot do that from the surface — stirring in the first minute is what stops pasta sticking, because that is when the starch is gelatinising and the pieces will weld if they are touching.
Rinsing afterwards actively removes the starch you spent the last ten minutes creating. The only exception is pasta destined to be eaten cold in a salad, where you are not building a sauce and you do want it to stop cooking.
Adding oil to the drained pasta to stop it clumping while you do something else: also no. If it is clumping, you drained too early and did not go straight into the pan. Fix the order, not the symptom.
